So you want to learn how to make meatloaf? By following the simple steps found on this site, you will be enjoying some of the most delicious meatloaf you have ever had! So lets just jump right in and get going!
Things You Will Need:
1 tablespoon olive oil (First Cold Pressed Extra Virgin is the best)
1 chopped yellow onion (you can also use white onions if you prefer)
1 small carrot, minced
2 cloves minced garlic
1 teaspoon chopped fresh thyme leaves (you can also use dried thyme if you do not have fresh)
2 teaspoons salt (preferably pink Himalayan salt or sea salt and NOT plain table salt)
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce (or however you say it)
1/3 cup chicken stock or broth (preferably the boxed organic Trader Joe’s brand)
1 tablespoon tomato paste
2½ pounds ground beef (Any type will do but the higher the fat content, the more flavor. Organic grass fed is best. In addition, you can mix different types of ground meats like veal, lamb, turkey, chicken, and pork with the beef for more flavor).
½ cup plain dry bread crumbs
2 extra-large eggs, beaten
1/2 cup ketchup, preferably Heinz (because Heinz is the best)
Preheat the oven to 325 degrees.
Heat the olive oil in a medium sauté pan.
Add the onions, carrot, garlic, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown.
Turn off the heat, add the Worcestershire sauce, chicken stock/broth , and tomato paste.
Allow to cool slightly.
In a large bowl, combine the ground meat, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don’t mash or the meatloaf will be dense.
Place the mixture into a loaf pan.
Spread the ketchup evenly on top.
Bake for 1 to 1¼ hours, until the internal temperature is 160 degrees and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.)
